1st Course: (choice of) 1/2 Dozen Oysters; Lobster Bisque with scallop quenelle; Duck Liver with pickled vegetables; and Chicory Salad with pears, Roquefort, cider vinaigrette

2nd Course: (choice of) Petrale Sole with leeks, trout roe, Champagne sauce; Roasted Beef Tenderloin with sautéed spinach, gratin Dauphinois, Périgourdine sauce; Roasted Duck Breast with parsnip purée, baby turnips, wild huckleberry sauce; Panisse (cauliflower, delicata squash, baby carrots, vadouvan butternut squash purée)
