The staple foods of Northern Indian cuisine are lentils, vegetables and tandoori meats and breads. Methods and style of preparation vary depending on locale, but entrées served throughout the area include kabobs, rich, fragrant rice dishes such as pilafs and mildly spiced kormas, braised meat in a creamy sauce. North Indian food is sometimes subtle, often complex, and always a delight.
