The patio, sun-splashed and bright, is as chill a spot as there is in Fairfax to enjoy the flavors of Mexico. The team focuses on non-GMO and diverse ingredients that shows up most prominently in a botana (little snack) of heirloom beans. Heritage pork and organic chicken help fill quesadillas and the menu adjusts to changes in seasonal and organic ingredient availabilities. Most importantly, all corn masa is nixtamalized (a technique to improve flavor and digestibility) and ground in-house, the resulting gorgeous blue handmade tortillas integral to the menu.
Local extends to the wine and beer menu where a Mexican style lager hails from Vallejo’s Mare Island, wines are Californian, and the sangria is made in-house.
